Gluten Free Fried Chicken Thighs
5-7 Chicken Thighs (I used boneless/skinless)

1/2 cup of almond flour

1/4 cup of arrowroot flour

2 eggs

1/2 tsp of each: turmeric, cayenne, ground sage, black pepper, salt (you can add more salt if you like, I tend to go light on salt)

1 tsp of each: garlic powder and onion power

Oil for frying (I chose avocado oil)

Preheat the oven to 375 F. On your stovetop, heat a pan (I used my cast iron) until it’s hot and add a few swirls of oil. Make sure the pan doesn’t get too hot where it reaches its smoke-point. Fry the thighs on each side for about 5-7 minutes over medium-low heat, being careful to make sure the almond coating doesn't burn. Once both sides are golden brown, place the pan inside and oven. Finish the chicken in the oven at 375 degrees for about 15 minutes or until the internal temperature reads 165F.
